They’re hearty, comforting, and surprisingly simple to make. If you have ground beef in the refrigerator and a package of pita bread in the pantry, you’re already halfway there.

Why You’ll Love These Beef & Cheese Pita Pockets

They’re quick and easy. The beef filling takes just a few minutes to prepare, making this a great option for a busy weeknight.

They use simple ingredients. Ground beef, gravy mix, mushrooms, cheese, and pita bread are all you need.

They’re filling. The combination of beef, gravy, cheese, and bread makes a satisfying meal without needing a lot of side dishes.

Everyone can customize their own. Add extra cheese, leave out the mushrooms, or use a different kind of cheese depending on what your family likes.

They’re deliciously crispy. Cooking the filled pita pockets in butter gives the outside a lightly crisp, golden texture while the cheese melts inside.

Ingredients

Ground Beef

I use 1 pound of ground beef for this recipe. You can use whatever lean-to-fat ratio you normally keep on hand.

Beef Gravy Mix

A packet of beef gravy mix makes this recipe incredibly easy. Prepare the gravy according to the directions on the package before stirring it into the cooked beef.

The gravy is what gives the beef filling its rich, savory flavor and keeps it from being dry inside the pita.

Canned Mushrooms

Drain the mushrooms well before adding them to the beef. If your family isn’t a fan of mushrooms, you can simply leave them out.

Cheddar Cheese

Shredded cheddar is my favorite here. Sharp cheddar gives the pita pockets a little more flavor, but mild or medium cheddar works just as well.

Pita Bread Pockets

Look for pita bread that actually has a pocket in the middle. You’ll want to be able to open the pita and spoon the beef mixture inside.

Butter

A little butter in the skillet is all you need to get the pita golden brown and crisp.

How to Make Beef & Cheese Pita Pockets

1. Cook the ground beef

Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks.

Once the beef is fully cooked, drain off any excess grease if necessary.

2. Add the mushrooms

Stir the drained canned mushrooms into the cooked ground beef.

Let them cook together for a couple of minutes so the mushrooms warm through and pick up some of the flavor from the beef.

3. Prepare the gravy

While the beef is cooking, prepare the beef gravy according to the directions on the packet.

Once it’s ready, pour the gravy into the skillet with the beef and mushrooms.

Stir everything together and let it simmer for a few minutes.

4. Fill the pita pockets

Carefully open each pita pocket and spoon some of the beef mixture inside.

Don’t overfill them. The gravy makes the filling juicy, and an overly stuffed pita can be difficult to flip.

Add a generous amount of shredded cheddar cheese.

5. Toast the pita pockets

Heat a griddle or large skillet over medium heat and spread a little butter over the cooking surface.

Place the filled pita pockets on the buttered pan.

Cook for a few minutes on each side, carefully flipping them with a spatula, until the pita is golden brown and crisp and the cheese inside has melted.

6. Serve

Let the pita pockets sit for a minute or two before serving. The filling will be very hot right off the skillet.

Then cut them in half if desired and enjoy!

Easy Variations

Skip the Mushrooms

Not a mushroom fan? No problem. Just leave them out. The beef and gravy mixture will still be delicious.

Try a Different Cheese

Cheddar is my favorite, but you could also try Monterey Jack, Colby Jack, mozzarella, or pepper jack for a little heat.

Add Onions

Cook a little diced onion with the ground beef for even more flavor.

I love recipes like these because they don’t require a long list of ingredients or a lot of complicated steps. You cook the beef, stir in the gravy and mushrooms, stuff it into pita bread with cheese, and toast everything in a buttery skillet.

That’s it.

The result is a crispy, cheesy pita pocket filled with rich, savory beef, the kind of simple dinner that makes you wonder why you didn’t start making it sooner.

If you try these Beef & Cheese Pita Pockets, I hope they become one of those easy recipes you keep coming back to! 🙂

Beef & Cheese Pita Pockets

Savory ground beef and mushrooms simmered in rich beef gravy, tucked into warm pita pockets with shredded cheddar cheese and toasted on a buttered skillet until golden and crisp.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Course: Dinner
Cuisine: American

Ingredients

  • 1 lb ground beef
  • 1 packet beef gravy mix
  • 4 oz canned mushrooms drained
  • 1 –1½ cups shredded cheddar cheese
  • 1 package pita bread pockets
  • 1 –2 tablespoons butter for cooking

Method

  1. Cook the beef: Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain any excess grease if needed.
  2. Add the mushrooms: Stir the drained canned mushrooms into the cooked ground beef and heat for 2–3 minutes.
  3. Make the gravy: Prepare the beef gravy according to the instructions on the gravy packet.
  4. Combine: Pour the prepared gravy into the skillet with the ground beef and mushrooms. Stir well to combine and let everything simmer for a few minutes until heated through.
  5. Fill the pita pockets: Carefully open each pita pocket and spoon the beef and gravy mixture inside. Add a generous handful of shredded cheddar cheese.
  6. Toast the pita pockets: Heat a griddle or large skillet over medium heat and lightly butter the surface. Place the filled pita pockets on the pan and cook for a few minutes on each side, gently pressing them down as they cook, until the pita is golden brown and crisp and the cheese is melted.
  7. Serve: Remove from the pan, let cool for a minute or two, and serve warm.

Notes

  • Use your favorite variety of shredded cheddar. Sharp cheddar adds a nice contrast to the savory beef gravy.
  • Be careful not to overfill the pita pockets, as the gravy can make them difficult to handle.
  • If the pita pockets are thick, you may want to warm them slightly before filling to make them easier to open.
  • The filling can also be made ahead of time and reheated before assembling the pita pockets.
