Ingredients
Method
- If using raw chicken, cook it until it reaches an internal temperature of 165°F. Shred with two forks. Rotisserie chicken works perfectly for a quick shortcut.
- In a medium mixing bowl, whisk together the cream of mushroom soup, milk, sour cream, onion powder, and ranch seasoning packet until smooth.
- Pour the sauce mixture into a large skillet over medium heat.
- Add the cubed cream cheese and stir frequently until completely melted and incorporated into the sauce.
- Reduce the heat to medium-low and allow the sauce to gently simmer for 3–5 minutes until slightly thickened.
- Stir in the shredded chicken and season with salt and black pepper to taste. Continue cooking until the chicken is heated through.
(Option 1)
- Serve the creamy ranch chicken over hot cooked rice. Sprinkle bacon over top and serve!
(Option 2)
- For a one-pan meal, stir about 3 cups of cooked rice directly into the sauce until evenly coated.
(Option 3)
- Serve over creamy mashed potatoes for another comforting variation.
Notes
- Rotisserie chicken makes this recipe incredibly fast and easy.
- Full-fat cream cheese and sour cream produce the creamiest sauce.
- The sauce will continue to thicken as it cools.
- If the sauce becomes too thick, stir in a splash of milk before serving.
- Leftover cooked rice works great in this recipe.
