Buffalo Chicken Pasta

This Buffalo Chicken Pasta is the perfect combination of creamy, cheesy, and spicy. Tender chicken is tossed with pasta in a rich buffalo cream sauce made with Parmesan, mozzarella, and cream cheese for an easy one-pot dinner the whole family will love. Ready in about 30 minutes, it's the perfect weeknight comfort food for anyone who loves buffalo chicken flavors.

Ingredients
  

  • 2 lb cooked chicken shredded or diced
  • 16 oz rotini pasta
  • 4 cups chicken broth 32 oz carton
  • 1 1/2 cups heavy cream
  • 3/4 cup buffalo sauce
  • 1 1/2 cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese
  • 1 tsp garlic powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

  • Sliced green onions
  • Chopped fresh parsley
  • Crumbled blue cheese
  • Ranch or blue cheese dressing
  • Extra buffalo sauce

Method
 

  1. Heat the olive oil or butter in a large deep skillet or Dutch oven over medium heat. Add the cooked shredded chicken, garlic powder, salt, and black pepper. Cook for 2–3 minutes, stirring occasionally, until the chicken is heated through and lightly seasoned. Transfer the chicken to a plate and set aside.
  2. Pour the chicken broth, heavy cream, and buffalo wing sauce into the same pot, stirring to combine. Add the uncooked rotini pasta and stir well. Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
  3. Add the softened cream cheese, shredded Parmesan cheese, and shredded mozzarella cheese. Stir until all of the cheese has melted into a smooth, creamy sauce.
  4. Return the cooked chicken to the pot and stir until everything is evenly coated in the buffalo cheese sauce. Taste and adjust with additional salt, pepper, or buffalo sauce if desired.
  5. Spoon the buffalo chicken pasta into bowls and garnish with sliced green onions or chopped parsley, if desired. Serve hot and enjoy!

Notes

  • Freshly grated Parmesan melts much smoother than pre-shredded cheese.
  • Stir the pasta frequently while it cooks to prevent sticking.
  • Adjust the heat level by adding more or less buffalo sauce.
  • Rotisserie chicken makes this recipe even quicker.
  • For an extra cheesy pasta, stir in an additional ½ cup mozzarella before serving.
